    In a saucepan, bring 2 cups of water to a boil. Remove from heat and stir in the bulgur. Cover and let it sit for about 15-20 minutes, or until it's tender and has absorbed the water. Once cooked, fluff it with a fork and set it aside to cool.

    Chop the tomatoes, cucumbers, radishes and lettuce. Cut the onion into slices. Finely chop the parsley.
